Ingredients:
- 200g Ragi pasta
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Garlic cloves
- Walnuts
- Cherry tomatoes
- Fresh basil & spinach leaves
- Salt & pepper to taste
- Grated Parmesan cheese
Instructions:
- Boil the ragi pasta according to the package instructions until al dente, then drain and set aside. Keep 1 cup of pasta stew aside.
- In a food processor, toss in chopped garlic and walnuts. Blend till coarsely chopped.
- Add fresh basil leaves, salt, black pepper, 2 tablespoons of lemon juice and blend until you get a fine green paste.
- Next, add 2 tablespoons of olive oil to the food blender and toss in some finely grated Parmesan cheese.
- Let it mix till you get thick & creamy. To regulate the consistency, use pasta water.
- Now add the canned tomatoes to a medium heat pan and bring it to a simmer in olive oil. Cook it for 5 minutes or till mildly sauté.
- Toss the cooked Ragi pasta in the sauce until well coated.
- Serve hot, garnished cherry tomato with grated Parmesan cheese if desired.
